Ingredients:

  • 1 lb ground meat (beef, pork, or a mix)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 large egg
  • Salt and pepper to taste
  • 1 cup red wine
  • 1 cup beef or vegetable broth
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 1 tablespoon flour (optional, for thickening)

Instructions:

  1. Prepare the Meatballs:

    • In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, egg, salt, and pepper.
    • Mix the ingredients thoroughly until well combined.
    • Shape the mixture into bite-sized meatballs.
  2. Cook the Meatballs:

    • Heat olive oil in a large skillet over medium heat.
    • Brown the meatballs on all sides, cooking them until they are cooked through. You may need to do this in batches to avoid overcrowding the pan.
  3. Prepare the Red Wine Glaze:

    • Once the meatballs are cooked, remove them from the skillet and set them aside.
    • In the same skillet, add red wine, beef or vegetable broth, and tomato paste.
    • Bring the mixture to a simmer, scraping the bottom of the pan to incorporate the flavors.
  4. Simmer the Meatballs in the Red Wine Glaze:

    • Return the cooked meatballs to the skillet, ensuring they are evenly coated in the red wine glaze.
    • Allow the meatballs to simmer in the sauce for 15-20 minutes or until the sauce has thickened slightly.
  5. Serve and Enjoy:

    • Once the meatballs are glazed to perfection, transfer them to a serving dish.
    • Spoon some of the red wine glaze over the meatballs.
    • Optionally, you can thicken the sauce further by mixing a tablespoon of flour with a little water and adding it to the pan, stirring until it thickens.
  6. Garnish and Serve:

    • Garnish with additional chopped parsley if desired.
    • Serve the Red Wine Glazed Meatballs over pasta, rice, or as an appetizer with toothpicks.
